Arroz Con Pollo

I’ve been on a bit of a rice dish kick lately. And you can’t have a rice dish kick without arroz con pollo, which might be the ultimate comfort food. Deeply flavorful with a hot sauce kick, it’s hard to beat! This one takes a slightly cuban flair, don’t forget the beer!
Mise en Place
Staples
- 2 cupschicken stock
- 2 cupslong grain rice
- ~4 tspkosher salt
- 1 cupcheap american beer, aka coors light
- 1/2 cupdry white wine
- 2 tbstomato paste
- 4 ozsliced pimentos
- 1/2 tspground achiote
- 1/2 tspmexican oregano
- 1/8 tspground nutmeg
- canola oil
Veggies
- 1 cuponion, diced
- 3 clovesgarlic, minced
- 1 cuppeas
Meats
- 1 lbbone/skinless chicken thighs, large bite size
Equipment
- 1dutch oven, medium hot
- 1oven, 350
- 1bowl
Directions
- season chicken, bring oil to temp, and brown on both sides a couple minutes
- evac to a bowl and set aside
- lower temp to medium low, and cook onion till soft 10 minutes
- add garlic cook, 2 minutes
- add tomato paste, cook 2 minutes
- add rice, toast 2 minutes
- add wine, raise temp to medium and let boil off, 2 minutes
- add spices, remaining salt, stock, beer, pimentos, chicken and bring to a boil
- cover, and pop in oven. cook for 25 minutes
- evac from oven, stir in peas
- serve with hot sauce and beer
