Campanelle Pasta with Sausage and Cherry Tomatoes

It’s pasta wednesday again. The thought of having what the kids want (noodles, jar sauce!) fills you with dread. But the clock is ticking, the cries of hunger are rising and you need something delicious and fast.

This is that thing. Italian sausage is one of life’s greatest pleasures and pairing it with a caramelized tomato sauce laced with some smoky aleppo pepper makes for a perfect pasta.

Not only that, it’s easy to make and should be on the table in 30 minutes.

Serves 4-6. Reheats well as leftofvers

Mise en Place

Dairy

  • parm, grated

Produce

  • 1 lbcherry tomatoes, halved
  • 1 largeshallot, minced
  • 3 clovesgarlic, minced
  • 1/2 cupbasil, chiffonaded

Staples

  • 1/4 cuptomato paste
  • 1 lbcampanelle pasta
  • olive oil
  • 2 tspaleppo pepper
  • kosher salt
  • fresh ground pepper

Protein

  • 1 lbmild italian sausage, crumbled

Equipment

  • 1salted pot of water, boiling
  • 1deep saute pan
  • 1plate
  • 1ladel
  • 1mixing bowl

Directions

  1. in a bit of olive oil, cook sausge over medium high heat, evac to plate
  2. lower heat to medium low, add shallots to pan, season with a big pinch of salt. Cook until translucent, about 3-5 minutes
  3. add garlic and cook 1 minute
  4. increase heat to medium add tomato paste and cook, stirring frequently until darker, about 2-4 minutes. add olive oil if needed
  5. add aleppo pepper and stir
  6. add cherry tomatoes and stir
  7. cook pasta according to package directions, shoot for on the al dente side
  8. meanwhile keep stirring the tomatoes and encouraging them to break down
  9. with one minute left in pasta cooking, add a ladel of pasta water to the tomatoes (congrats its now a sauce!)
  10. stir basil into sauce
  11. take 3 or 4 more ladels full of water and reserve in bowl
  12. taste sauce and adjust seasoning as appropriate (it will need more salt and a few grinds of pepper at the least)
  13. add sausage back to tomato sauce
  14. drain pasta and add to tomato sauce
  15. stir and assess sauce, if it looks to dry and pasta water until it looks right
  16. serve, topping with cheese
