Creamed Spinach

Name: Creamed Spinach
Ingredients: 1 big box of baby spinach; 1 small shallot; 1 tbs shallot; 1 cup half and half; 2 tbs butter; 1/4 lb bacon cut into batons; 2 tbs flour; nutmeg

If your going to have steak, you need a side

Mise en Place

Produce

1 bigbox of baby spinach
1 smallshallot
1 tbsshallot

Dairy

1 cuphalf and half
2 tbsbutter

Protein

1/4 lbbacon cut into batons

Staples

2 tbsflour
nutmeg

Directions

In a saucepan, make a light roux (2 tbs each flour & butter), take off heat whisk in cream, put back on low, microplane in some nutmeg
Cook bacon, set aside
Sweat shallot in 1 tbs butter
Wilt spinach
Add bacon
Add cream till it seems right
Serve
