Garlicky Cuban Pork Sliders

More proof that just about anything that is usually wrapped in a tortilla can easily be repurposed to make an insanely great slider.

These are a combination of pulled pork cooked with cuban flavors topped with mojo. The spicy mayo and the sweet roll bring it home.

Mise en Place

Veggies

  • 3 + 3juice oranges, juiced
  • 1 + 1lime, zest and juice
  • 1 + 1 sprigsoregano, leaves only on one, stalk of other
  • 1 + 1 headsgarlic, 1 roughly chopped, 1 minced
  • 1 largeonion, sliced
  • 1bay leaf

Meats

  • 4-5 lbPork Shoulder, cut into big pieces (6-8)

Staples

  • 2 tbsbrown sugar
  • 2 tbs + 1/2 cupEV olive oil
  • 1 tbsground cumin
  • mayo
  • hot sauce
  • kosher salt
  • slider rolls (i like kings hawaiian)

Equipment

  • 1Electric pressure cooker
  • 1Stick blender (regular blender is fine too)
  • 2Sauce pans

Directions

  1. Liberally salt pork (2 tbs worth for 5 lbs of meat should do the trick)
  2. Combine juice of 3 oranges, juice of 1 lime, zest of 1 lime, leaves of 1 sprig of oregano leaves, cumin, 1 roughly chopped head garlic, brown sugar into a jar and blend with stick blender
  3. Put pressure cooker on saute mode, add 2 tbs of oil and sear pork in batches.
  4. Once all pork is browned, put all of it back into pressure cooker, add sauce and a bay leaf
  5. Cook on high pressure for 70 minutes. Once done, let it naturally depressurise
  6. Meanwhile, heat oil on medium in a sauce pan
  7. In another sauce pan, put onions, a big pinch of salt, the rest of the orange and lime juice, plus the finely minced head of garlic and oregnao . Bring to a simmer
  8. Pour oil over onion mixture, cover, reduce heat to low, and let cook 5 minutes. Turn off heat and let cool.
  9. Mix some mayo and hot sauce together in a ratio that seams pleasing. Start with 1/4 cup mayo and a few dashes of hot sauce and go from there. Add a pinch of salt while you are at it.
  10. Once pork is done, evac pork. Skim oil off remaining sauce, and turn on the saute function. Reduce sauce by half
  11. Shred pork using two forks, toss with remaining sauce.
  12. Strain onions, pick out oregano.
  13. To assemble sliders: take a bun, open it, slater with mayo on both sides, put pork on one side and onions on the other, close it. Eat!
