Leek and Goat Cheese Quiche

Leek and Goat Cheese Quiche

I can confirm that real men do indeed eat quiche.

Mise en Place

Pie Crust

  • 1 1/4 cupsap flour
  • 1/2 tsptable salt
  • 1 tbssugar
  • 4 tbsbutter cut into pieces
  • 3 tbscrisco
  • 4 tbsice water

Quiche

  • 1 big or two medium leeks, sliced white and light green parts
  • 2 tbsbutter
  • 1 smallthing of fresh goat cheese
  • 2eggs + 2 egg yolks
  • 1 1/2 cuphalf and half
  • 1/2 tsptable salt
  • 1/2 tspwhite pepper
  • 1/8 tspmicroplanned nutmeg

Directions

  1. Pie Crust: Pulse dry stuff together
  2. Add butter pulse 5 times
  3. Add shortening pulse 5 times
  4. Evac to mixing bowl
  5. Scatter 4 tbs water over mixture
  6. Press with bench scraper into dough. Add extra water if needed
  7. Shape into ball
  8. Cover with plastic wrap
  9. Refrigerate overnight
  10. The next day, take dough out, let sit for 30 minutes
  11. Heat oven to 375
  12. Using a huge ziploc bag, roll out dough
  13. Cut away top of bag
  14. Put buttered pie pan over dough, flip and press dough into pan
  15. Flute and make it pretty
  16. Bake with pie weights over foil for 17 minutes
  17. Quiche: Preheat oven to 375
  18. Cook leeks slowly over low heat w/ butter and salt till soft
  19. Meanwhile whisk eggs, half and half, salt, pepper, and nutmeg together
  20. Scatter leeks on bottom of pie crust
  21. Crumble and scatter goat cheese on top of leeks
  22. Open oven, pull out middle rack half way
  23. Place pie pan on the rack
  24. Laddle in egg mixture
  25. Carefully slide rack back into oven
  26. Cook ~33 minutes
  27. Let cool 30 minutes
