Smoked Kielbasa, Cauliflower, Onions

Some times you need some thing easy. Of course, you always need something delicious. Those kielbasa that hang out in your grocer’s meat case, by the hot dogs, you know the ones you never buy? Yeah those. They are delicious. Time to give them a shot

Making them is simple, heat and eat. You could just brown them up in a skillet, serve with a little mustard and go to town. But like your mom used to tell you, you really should have a serving of vegetables with every meal.

So enter the cauliflower. Roasted till caramelized and yummy, along with an onion, a little heat, and some lemony zing, it provides a nice counterpoint to the smokey deliciousness of the sausage. Best part, is its super easy to make after a long day of work and it’s keto friendly for you dieting types.

Serves two, takes 15 minutes of prep, 30 minutes of cooking, 3 minutes to scarf it all down.

Mise en Place

Produce

  • 2 largeonion, quartered
  • 1 headcauliflower, broken down into florets
  • 6 clovesgarlic, smashed
  • 1/2lemon

Staples

  • a few glugsolive oil
  • a big pinchkosher salt
  • a few grindsblack pepper

Spices

  • 6 sprigsthyme
  • pinchred pepper flake

Meats

  • 1smoked kielbasa, whole

Equipment

  • 1bowl
  • 1sheet pan
  • 1tongs
  • 1oven, preheated to 425

Directions

  1. toss onion, cauliflower, garlic, thyme sprigs, red pepper flake, salt, pepper, and olive oil together in bowl
  2. spread veggies out on sheet pan, pop in oven for 15 minutes
  3. using tongs, toss veggies around and clear a space in the middle of the pan
  4. deposit kielbasa in the middle of the pan
  5. cook for 10 minutes, flip kielbasa, toss veggies around
  6. cook another 10 minutes
  7. evac sheet pan from oven
  8. put veggies onto serving platter (leaving sprigs of thyme behind)
  9. squeeze lemon juice onto veggies
  10. cut kielbasa into appealing pieces
  11. nestle pieces into veggies
  12. serve and eat
